Doma

French-inspired Korean cuisine. Have you tried it before? Not me, at least not until I visited Doma back in December. Doma (Instagram: @domatoronto, Facebook: Doma) is a French-inspired Korean restaurant that meshes French cooking techniques with traditional Korean ingredients and flavours (or vice versa). According to Doma's website, their menu changes every month, which is in line with chef/owner Paul Kim's philosophy of using local ingredients as much as possible. Each month's menu would include Kim's new creations, as well as two to three popular dishes from the previous month.

Located on Clinton and College, the Doma space was previously occupied by Backwoods Smokehouse, and before that Red Sauce, and before that Acadia. The decor is minimalist and simple; clean lines with white walls and light-wood furnishings. I personally find the room a bit bleak. Also, maybe it's the OCD in me but because all the tables and chairs are angled diagonally, I had a really strong urge to move everything so that they would be parallel to the wall.

Anyway, enough about the room, let's talk about the food. I was really eager to try Doma because I always viewed Korean food as a more casual type of cuisine; as in, I've never experienced "Korean fine-dining" or "refined Korean food" before. Which is why I was really excited to try Doma, especially having heard that chef Kim studied at Le Cordon Bleu in Ottawa. Combining his knowledge in French techniques with his Korean background, I was pretty sure that Kim would be debuting a refined menu that none of us have ever tried before.

By the way, I love the long and slender cutlery at Doma. They are a more stylish matte black versions of the silver ones you would normally find in traditional Korean restaurants.

NEXT GENERATION ($13)
Soju, Perilla, Maple, Lime, Ginger Beer
OLD BOY ($13)
Cucumber infused Boodles Gin, Rice Vinegar, Soy, Daikon

My friend and I chose the $65 per person tasting menu which consisted of an amuse, six courses and a dessert. You basically get to try the entire menu with this tasting so I highly recommend getting it.

Maillard.co Gift Card Giveaway - CLOSED

I'm giving away a $100 Maillard.co gift card!

Maillard.co is a brand new online butcher shop that offers over 100 different cuts of meat of all sorts, free of artificial colouring, from beef and veal, to pork, poultry and lamb. I was sent a sample Maillard.co box last month to try so I'll share my experience with you here. If you like what you see, make sure you enter my contest below!

All Maillard (Instagram: @maillard.co, Facebook: Maillardproducts come in a 100% recyclable isotherm cooler that allow the meats inside to remain frozen for at least 30 hours following their shipment. When you open the box, you'll also find a layer of dry ice blocks used to maintain an inside temperature of -80 degrees for maximum preservation. The cuts of meat – sold by unit or in boxes – are individually vacuum sealed then instantly frozen. All online orders are delivered the next day.

Maillard.co guarantees its meat to be free of artificial colouring. From slicing to shipping, all of their meat, except their flattened chicken which is packed directly from their supplier, is processed in their HACCP-certified facilities located in Terrebonne, Quebec. Their beef is selected according to its high-quality grading (AA, AAA and Prime), which guarantees optimal marbling, tenderness and flavour.

"From slicing to shipping, all of our meat is processed right here in Quebec at our Terrebonne facilities that are HACCP certified, which are the highest food processing standards in the world. Our customers will enjoy choice cuts of meat that have been carefully selected and prepared by our artisan butchers year-round." - Pascal Arsenault, owner of Maillard.

For my Maillard sample box (valued at $85), I received:

The Maillard Grilling Guide
A Maillard apron
1 pkg AAA boneless ribeye steak (Selection 1913)*
1 natural flattened chicken
I pkg trimmed boneless chicken breasts
1 pkg boneless duck breast
1 pkg frenched bone in pork chop

*Selection 1913 is Maillard's finest tasting product. The best meat in categories AAA and Prime is selected according to marbling, colour and musle size. These choice cuts are aged for 45 days for optimum flavour and tenderness.

With all the wonderful cuts of meat in my freezer, it was time to get cookin'! My box came with several recipe cards, so I decided to use one of them, their "Portuguese Piri Piri Style Chicken" using their flattened chicken (there are currently more than 20 featured recipes on the Maillard website that shows you the different ways you can cook your choice cuts). We seasoned the AAA boneless Ribeye with some salt and pepper, and pan-seared it to a nice rare to accompany our piri piri chicken and roasted vegetables.

Paese Ristorante

"Inspired in Italy, Made in Canada"

Paese Ristorante has been serving Italian inspired food for over 25 years in North York. Owner and operator Tony Loschiavo was three years old when he moved to Canada from Southern Italy in 1965. Growing up with a passion for food and its preparation, Loschiavo’s early start in the restaurant industry was with two acclaimed Toronto restaurants of the time: Fenton’s and Noodles. In 1983, he founded L-eat Catering and in 1989 opened Paese Ristorante (Instagram: @paeseristorante, Facebook: Paese Ristorante). The L-eat Group cultivates a 3,000 square feet urban garden in midtown, producing fruits and vegetables used for their catering events, and everything from tomatoes and chili peppers for the chefs, to mint and lavender for the bartenders at Paese.

I visited Paese for some Italian cooking on a Saturday night. As usual, we started with cocktails.

PAESE COLLINS ($14)
Beefeater gin, lemon, thyme-infused syrup
OLD ITALIAN FASHIONED ($14)
Campari, Maker's Mark bourbon, sugar cube, orange

COMPLIMENTARY FOCACCIA
Tapenade made of tomato, roasted eggplant and red pepper.

Paese's dinner menu features a selection of salads, antipasti, pastas, pizza, fish and meats, and sides.

GRILLED OCTOPUS ($16)
Potato, grilled escarole, mint, lemon and chill
This was a marvelous appetizer, and it's no wonder that this dish is so popular at Paese. Coupled with an impressive presentation, the grilled octopus here is soft and tender yet still had good texture and chew. The creamy sauce and the hearty potatoes were perfect accompaniments to the octopus.

A Look at the Newly Revamped Biff's Bistro

After a two-month-long renovation, Biff's Bistro on Front Street finally reopened its doors in April. When the modern French bistro encountered a burst pipe earlier this year, the restaurant took the opportunity to temporarily close up shop to revamp itself. How so? Think new specials, new interior, new website, and even new social media handles (since we're at it, it's @BiffsBistro on Twitter/Instagram and Biff's Bistro on Facebook).

I realized my first visit ever to Biff's Bistro was a long time ago, an embarrassingly long time ago. After checking my trusty "Dining Out" page, I discovered my Biff's blog post from August 2010 when "Tweetups" were still at thing. That's six years ago, guys. This is precisely why I feel ancient in the food blogging world sometimes.

Sorry, I digress. I can't say I noticed too much of a difference in decor but then this is solely based on my very vague memory of the room from six years ago. What I do know for sure is that I love the casual French bistro vibe and furnishings at Biff's.

The bar has noticeably changed for sure. It is a lot more open and spacious now compared to before.

Because of the warmer weather, all I want is rosé nowadays. So, instead of my usual cocktail I ordered myself a glass of sparkling rosé to start. My friend also had a lighter cocktail than usual. I guess we both wanted to start with something light and refreshing :)

New Summer Cocktails at The Keg Steakhouse + Bar

Hurray! It's finally summer! Well, not officially yet but close enough. Wasn't the weather on the long weekend just fabulous? It was so sunny and hot out I even went to the beach on Victoria Day and got myself a tan. Yes, you heard right, a tan in May! I seriously can't wait to see what the rest of summer has in store :)

To celebrate the warmer weather, The Keg Steakhouse + Bar (Twitter: @TheKeg, Facebook: The Keg Steakhouse + Bar) invited me to their King West location to try their newly introduced summer cocktails and martinis. Inspired by the beautiful new season, The Keg's range of new cocktails all feature a variety of refreshing herbs such as rosemary and mint, freshly squeezed citrus fruits, and premium liquors such as Boodles Gin, George Clooney’s Casamigos TequilaGosling’s Black Seal Rum and Lot No. 40 Whisky. I love all those things. All of it. If you can't tell already, cocktails are my weakness!

My friend and I tried a number of cocktails that evening, and because we both love boozy drinks, we "Keg Sized" everything (it's really the way to go). Without further ado, below are the cocktails and martinis we tried. Aside from the Keg Caesar, all the cocktails are from The Keg's new cocktail menu. The first price listed in the brackets is 1oz, the second is 2oz (Keg Size).

FAMOUS KEG CAESAR ($7.5 / $11.5)
Polar Ice vodka, Caesar mix, Tabasco and Worcestershire
LONDON BUCK ($7.5 / $11.5)
Boodles gin, fresh lemon and lime juice, simple syrup, muddled mint and raspberries, finished with a float of ginger beer
NEW YORK SOUR ($7.5 / $11.5)
Lot No. 40 whisky, fresh lemon and lime juice, simple syrup finished with a red wine float

BLACKCURRANT GINGER MARTINI ($11)
Casamigos Blanco tequila, Cassis, fresh lemon and lime juice, ginger syrup finished with a float of ginger ale
PINEAPPLE SPLASH ($7.5 / $11.5)
Gosling’s Black Seal rum, muddled fresh pineapple and mint, brown sugar, lime juice and a splash of ginger beer

DRUNKEN CHERRY ($7.5 / $11.5)
Casamigos Blanco tequila, triple sec, house-made drunken Bing cherry juice, agave syrup and fresh lemon and lime juice
MANGO MOJITO ($7.5 / $11.5)
Havana Club 3 Year Old rum, fresh lemon and lime juice, muddled sugar, mango and mint topped with soda.
NEW YORK SOUR ($7.5 / $11.5)
Lot No. 40 whisky, fresh lemon and lime juice, simple syrup finished with a red wine float

All these cocktails were really tasty in their own unique way, we actually liked them all. If I had to choose, my favourites would be the New York Sour (I tend to like sours), the Mango Mojito (mango is my favourite fruit) and the Pineapple Splash (I'm a sucker for anything ginger beer). My friend's favourites were the New York Sour (because it's the booziest) and the London Buck. Since we both really enjoyed the New York Sour, here's the recipe for it:

Piano Piano

Splendido, my favourite fine-dining restaurant in Toronto, had its last service on New Year's Eve last year. Almost five months have passed and I can't say I'm over the loss; after all, the acclaimed restaurant proudly holds the title of "The Most Blogged About Restaurant" here on Food Junkie Chronicles. Ahhhhh, damn it. I miss Splendido. I miss their tasting menus dearly *sigh*. I guess the saying is true, "All good things must come to an end". But must it? Must it, really?

In March, chef and owner Victor Barry re-opened 88 Harbord as Piano Piano the Restaurant (Instagram: @pianopianotherestaurant, Facebook: PIANO PIANO the Restaurant). Talk about a quick transformation. To start, the Italian trattoria is now pink and sports a bright and colourful mural. You can't miss it!

In order to achieve a work/life balance, chef Barry's Piano Piano serves simple and delicious Italian food rather than the elaborate, fussy tasting menus that Splendido was famous for. Barry's goal is to have a casual restaurant where he doesn't have to be on the line every single day. He wants a place where he can bring his two young daughters, ages one and two, and welcome other families to dine.

The newly renovated space is decorated with vases of fresh flowers, floral designs, brass fixtures, cushioned banquettes, as well as original artwork from Barry’s eldest daughter, Charlotte.

I fully expected the white tablecloths to be gone, naturally, as well as the plush, leatherback chairs, but the most dramatic change would have to be the open kitchen (note the large wood fired pizza oven in the back corner, which I was told was made with an insane amount of of bricks, steel and cement)! I wish Splendido had these front row seats! OMG, I must move onnn...

Zomato x FoodismTO @ The Good Son: A #ZomatoMeetUp

Maybe, just maybe, you're wondering "What the heck does she mean by Zomato x FoodismTO @ The Good Son: A #ZomatoMeetUp?" Meh, it's just my way of telling you guys I attended a Zomato Meetup dinner hosted by Zomato and Foodism Toronto at The Good Son Restaurant, that's all. I'm trying to be more creative with my writing these days. I'm failing miserably already, aren't I?

Last week, Zomato and Foodism Toronto, invited me and several foodies for an intimate tasting dinner at The Good Son, a restaurant that I've been dying to check out. As a matter of fact, The Good Son (Twitter: @thegoodson_to, Facebook: The Good Son Restaurant) is one of 12 restaurants participating in the #TOMealsForAYear giveaway, an amazing contest going on right now where one lucky winner will win a prize consisting of 12 meals (and drinks!) for two at 12 of Toronto's top restaurants. That's right, one meal every month for a year. Imagine that!

In association with restaurant listing and booking engine Zomato, Foodism Toronto has pulled together 12 of Toronto's most vaunted restaurantsThe list is very impressive, if I may say so myself:

Cafe Boulud
Lisa Marie
George
The Good Son
Canoe
Carmen
Windsor Arms
The Chase
Miss Thing's
Miku
NAO Steakhouse
The Carbon Bar

You MUST love food if you're reading this, so what are you waiting for? GET ON IT and enter now! If you snooze you lose because the contest ends on April 1st. By the way, if you're not familiar with Foodism Toronto, you will be very soon. Foodism is, in fact, London England's largest food and drink magazine, and in November 2015, Foodism Toronto was born. It's a website and weekly newsletter, and coming September, they will be launching a  print magazine which will feature local trends, profiles, personalities, gadgets and stories from Canada’s food and drink capital.

Whew. With that outta the way, let us now focus on All The Good Food at The Good Son! That was pretty clever, right? Right?! ;) First things first, sitting by the pass has its pros and cons. I love being close to all the action in the kitchen, especially this one with that beautiful wood fire oven imported in from Mam Forni, Italy, in the back. At the same time, though, it's the absolute worst when you're hungry. DAMN IT, JUST GIMME ALL THE FOOD RIGHT NOW!

Chef Vittorio Colacitti (@vittorioreoand his team at The Good Son prepared a special seven-course tasting menu for the evening. The dishes were either entirely off-menu or a variation of what's normally offered on the menu.

SEA BREAM CRUDO
Tomatillo, apple, almond, avocado
Great start to the tasting. A beautiful and delicate dish that's rich in flavour and texture.

New Café Boulud (Lunch)

I've written about Café Boulud a total of four times on Food Junkie Chronicles. No other restaurant, besides Splendido, holds that kind of record (FYI I have five posts on Splendido). Now that Splendido is *sadly* shuttered, Café Boulud (Twitter: @CafeBouludTO, Facebook: Café Boulud Toronto & d|bar) will soon take over as "the most blogged restaurant" on Food Junkie Chronicles because I got this lunch post up now plus a dinner post scheduled soon (that post will be fairly long since it'll combine my three dinners there).

In any case, all this clearly indicates one thing, that I'm a big supporter of Café Boulud. I was already a fan of the "old" Café Boulud - I had countless meals there with my friends and family - and not surprisingly, I'm now an even bigger fan of the "new" Café Boulud ever since its "transformation" last September.

Located at the Four Seasons Hotel, the new Café Boulud features a stylish redesign by London-based designer Martin Brudnizki. The ribbed wraparound banquets upholstered in jaguar green and the 1950s-shaped chairs in ruched leather mixes classic with contemporary. The dining room is elegant and sophisticated, yet warm and inviting.

If this doesn't scream "French brasserie" I don't know what does. I love the retro-modern look of this dining bar counter which is constructed in wood panels painted in a high gloss lacquer and topped with marble. It features a bronze and glass gantry, and eight leather bar stools.

Café Boulud's new menu highlights both bistro classics and contemporary dishes inspired by Chef Daniel Boulud's family growing up in Lyon. Deeply rooted in French tradition, the menu was created in collaboration by Chef Boulud and Chef de Cuisine Sylvain Assié.

My friend and I went for lunch two Saturdays ago to celebrate his birthday. It was my first time ever having lunch at Café Boulud and this visit marks my fourth time at the new Café Boulud.

When you're at the restaurant, whether it's for lunch or dinner, make sure you start off with a cocktail! My favourite cocktail there is the Led Zeppelin with tequila, amaro nonino, aperol and lime. It's so delicious! Cocktails I also enjoy includes Watermelon Smash, Elderflower Fizz and Sazerac.

MARTIN BRUDNIZKI ($14)
Gin, jack rudy special batch tonic, lemon
ELDERFLOWER FIZZ ($15)
St. germain, chambord, lemon, prosecco

Bar Begonia

Bar Begonia is so good, guys. I had dinner there two weeks ago and I still can't think of one bad thing to say about the place. From ambiance, service, drinks to food, Anthony Rose's sixth spot gets nothing but praises from moi. Bar Begonia is killin' it.

Just down the street from Big Crow and up the street from Fat Pasha (both Rose's), my friends and I arrived at the newly opened Bar Begonia at 6:30pm sharp on Friday night. We managed to snag the last four-top. Boy, did I feel extremely lucky at that point, especially when there wasn't one empty seat left in there. To celebrate we immediately ordered a bunch of cocktails to start. Not having to wait for a table on a Friday night is a damn good enough reason to get our dranks on (note that Bar Begonia remained packed for the next three hours we were there).

Before I get to the booze and the food here's a bit about Bar Begonia. Open from 11am to 2am, 7 days a week, Bar Begonia (Twitter: @barbegonia, Facebook: Bar Begoniais a 40-seat Parisian-style cocktail bar serving craft cocktails and snacks with a French flair. The kitchen is helmed by chef Trista Sheen, formerly of the now shuttered Crush Wine Bar. Although Bar Begonia doesn't take reservations (it does but only for parties of 8 or more) I was thrilled to hear that they'll have a patio set up by this summer.

"Draw me like one of your French girls".

Behind the bar is general manager Oliver Stern and bar manager Veronica Saye. I've been a big fan of Oliver's cocktails ever since my Toronto Temperance Society days. I say it that way because I used to go to "TTS" a lot, some of my favourite cocktails from the speakeasy were their Earl Grey Sour, Whisky Sour, Petey's Muddle, Old Fashioned and La Hoja. So, when I found out Oliver was the GM at Bar Begonia I had no doubt in my mind that their cocktails would be excellent.
