Easy & Delicious Jammin' Recipes

Have you ever thought of using jam as more than a condiment? More than just a spread on bread? Sure, peanut butter and jelly sandwiches will forever be awesome but, for one reason or another, many people fail to realize that jam is also a fabulous ingredient in many recipes! I felt particularly inventive over the weekend and experimented with different flavours of jams, pairing them with foods to create some pretty tasty recipes. Take a look :)

PEACH, PROSCIUTTO AND BRIE GRILLED CHEESE
This super easy grilled cheese is hard to beat. It is simple and quick enough for weekday lunch yet can also pass for the dinner table. I love the addition of the peach jam since it serves as a "glue" between the sweet, creamy Brie and the savoury prosciutto. I made this tasty grilled cheese on Saturday for lunch.

Ingredients
2 slices of bread
1 tbsp of melted unsalted butter
2 oz Brie, thinly sliced
2 tbsp of peach jam
2 oz prosciutto

Heat a large pan over medium-heat. Brush half of the melted butter on one slice of the bread, and lay it down on your prep area, butter-side down. Spread 1 tbsp of jam onto both slices of bread, then layer on the cheese and the prosciutto. Place sandwich in the warm pan butter-side down, and press down every now and then while it cooks. Brush the rest of the butter on the top of slice first before flipping the sandwich. Grill on each side for about 3 minutes each, or until the bread has thoroughly crisped and the cheese has started to melt. Makes one sandwich.

STRAWBERRY BANANA YOGURT SMOOTHIE
If you love strawberries and bananas, you will be delighted with this smoothie. Not only does it taste like dessert it is also extremely healthy. Loaded with calcium, potassium and vitamin C, this perfect combination of fruit and dairy is a guarantee hit in the summer. This glass of cold, refreshing smoothie was exactly what I needed after spending an entire day of running errands.

Ingredients
2 tbsp of plain yogurt
2 tbsp of strawberry jam
1/2 ripe banana (peeled)
1 cup of milk
3 or 4 ice cubes

In a blender, process all ingredients until smooth and frothy. Makes one large smoothie.

ORANGE MARMALADE CRESCENT ROLLS
Whether you're hosting a casual get-together at home or preparing an after-school snack for the kids, everyone will love these delicious and fluffy orange marmalade crescent rolls. With only two ingredients there's really no excuse not to make them! Served warm, I had these light crescent rolls for breakfast Sunday morning with a bowl of cereal.

Ingredients
1 tbsp of orange marmalade
1 (4 oz.) package of refrigerated crescent rolls

Preheat oven to 375°F. Unroll crescent roll dough into 8 triangles and spread orange marmalade onto each triangle. Roll up each loosely, starting at shortest side of triangle, rolling to opposite point and curving each into crescent shape. Place on lightly greased cookie sheet. Bake 8 to 10 minutes until golden brown. Makes 8 crescent rolls.

Rose and Sons

The following is a tip for you readers: make sure you schedule an afternoon nap after Sunday brunch at Rose and Sons (Twitter: @RoseandSons, Facebook: Rose and Sons). You'll need it. Guaranteed.

Located on 176 Dupont Street and opened for breakfast, lunch, weekend brunch and dinner, Rose and Sons is a new neighbourhood diner that does fancy comfort food (chef Anthony Rose of Rose and Sons prefers the phrase "country rustic" over "comfort food".) So what is "fancy comfort" / "country rustic", you ask? Well, think rich and hearty comfort food kicked up a notch. Actually, kicked up several notches. As a case in point, let us look at some of the items on Rose and Sons' menu:

Patty Melt Gurger - Grilled cheese, fried onions, fries, chili mayo
Pork Fried Rice - Peanuts, china town sauce, egg, ginger
Happy Pork Plate - Chop, kabanosy, dr bacon, applesauce, mustard pickle
Eggs - 3, schmaltz hash, toast, bacon or sausage pork chop
Griddled Brie Cornbread - Brisket, fried egg, maple syrup, chili sauce

Do you get it now? It's like comfort food on steroids. Or fatty delicious pork heaven.

People's Foods was an old diner that previously occupied Rose and Sons' space. The "Food" part remains intact.

The small 30-seat diner was bustling last Sunday afternoon (i.e. expect lineups).

Semi-enclosed at the front of Rose and Sons is the kitchen...probably one of the smallest kitchen I've ever seen.

World Egg Month Challenge + Giveaway - CLOSED

October is World Egg Month and Egg Farmers of Ontario (@EggFarmersOnt) are celebrating the great work that our Ontario egg farmers do for us everyday. I was also asked by Egg Farmers of Ontario whether or not I would be interested in getting involved in the celebration and participate in an egg "challenge". Okay, I'm not naturally competitive but when it comes to food challenge...yeah sure, bring it on! =D

The challenge involves taking a basket of ingredients provided to me by Egg Farmers of Ontario and making my own version of French Toast. These ingredients (and a few extras) can be used to make Dianne's "Cinnamon Spice French Toast with Maple Syrup Apples", a recipe provided with the basket of goodies (Dianne McComb is an egg farmer in Lucan, Ontario).

I was encouraged to "use the eggs and take it to the next level by whipping up my own perfect French Toast recipe (or add my own secret ingredient)".

I knew I wanted to use Dianne's recipe as a base and just come up with a variation to it as I'm not the most creative person (I would probably end up wasting a lot of brain cells if I were to come up with a whole new French Toast recipe). Anyway, when I noticed the jar of strawberry jam (♥ jam) I immediately thought of peanut butter & jam sandwiches; I have the biggest craving for PB&J sometimes (I enjoy feeling like a kid when I eat it) and so why not try making a PB&J French Toast? And instead of apples, use bananas? I'm pretty sure people have done PB&J French Toast already but hey, it's new in my world! So I used the jar of peanut butter at home and bought bananas from Longos and here it is...

♥ Food Junkie's PB&J Cinnamon Spice French Toast ♥

My PB&J French Toast was not "perfect" and definitely had no "secret ingredient" but still, I gotta say I enjoyed my creation a lot. I did not use syrup when I was eating this PB&J French Toast because the strawberry jam that I placed on top and the bananas in between provided all the natural sweetness. The peanut butter with it was soooo tasty too! This PB&J French Toast was really fragrant because I used Dianne's spice mixture recipe =)

Let me quickly show you what I did:

1. Spread two pieces of bread with peanut butter and place sliced bananas on top of one.

2. In a large bowl, crack open two eggs and admire their beauty =P
